How to Make the Best Homemade Hamburgers:

  1. Preheat a non-stick skillet over low-medium heat so it’s hot but not smoking.
  2. In a medium bowl combine the beef, finely diced onions, spices, liquid smoke, and Worcestershire sauce. Mix gently until everything is evenly distributed.
  3. Divide the mixture into two equal portions (about 4 ounces each). Place each portion between two pieces of parchment paper and press into round patties.
  4. Transfer the patties to the preheated skillet. For well-done burgers, cook about 7–8 minutes per side. Adjust time for your preferred doneness.
  5. Remove the patties from the pan and let them rest on a cutting board while you prepare the buns and toppings.
  6. Melt 1/2 tablespoon butter in a skillet over low heat. Add a bun and toast until golden. Repeat with the second bun.
  7. Build the burgers with your favorite condiments and toppings, then serve immediately.

  • cup white onion, finely diced
  • ¼ teaspoon ground mustard
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon seasoned salt
  • 1 teaspoon liquid smoke
  • 1 teaspoon Worcestershire sauce

Toppings

  • 2 hamburger buns
  • 1 tablespoon unsalted butter
  • sliced pickles
  • sliced onions
  • sliced tomatoes
  • lettuce
  • 2 slices American cheese, or your favorite variety (optional)

Instructions

 

  • Preheat a non-stick skillet over low-medium heat.

  • Combine the meat, onions, spices, liquid smoke, and Worcestershire sauce in a medium bowl and mix until evenly combined.
  • Divide the mixture into two equal portions and roll each into a ball (about 1/4 pound each).
  • Place each ball between two sheets of parchment and press into patties.
  • Remove the parchment and place patties in the hot skillet. Preheating the pan helps form a nice crust, but keep the heat moderate to avoid burning.
  • Cook about 7–8 minutes per side for well-done; shorten for medium or rare to your preference.
  • Remove from the pan and let rest while you toast the buns.

Toppings

  • Melt ½ tablespoon butter in a skillet on medium. Place a hamburger bun in the pan and toast until golden.
  • Repeat with the second bun.
