Grilled Chicken Avocado Salad with Fresh Mango Dressing

A friend recently sent me a link about a stolen seven-tonne mango statue, and I couldn’t tell if it was a prank. Who would take a giant mango like that? It wouldn’t be easy to hide in a backyard, and its usefulness is questionable. My best guess is a devoted mango fan, grieving the end of Australian mango season. I sympathize—when season ends I miss the sweet, juicy fruit. Just a month ago we bought mangoes by the dozen and turned them into popsicles, salsa and other treats.

This recipe is my little farewell to mango season. Have you tried mango dressing? It’s wonderful—bright, sweet and creamy—and it pairs beautifully with avocado and grilled chicken. The dressing comes together quickly and keeps for about a week in the fridge. If you love mango, toss a few extra chunks into the salad for even more fruit-forward flavor.

Ingredients

For the dressing

  • 1
    ripe mango
    peeled and roughly chopped
  • 2
    tbsp
    cider vinegar
    or white wine vinegar
  • 2
    tbsp
    olive oil
  • ¼
    cup
    orange juice
  • salt and pepper to taste

For the salad

  • 4
    cups
    baby spinach leaves
  • 1
    avocado
    cut into chunks
  • 1
    grilled chicken breast
    cut into pieces – see notes

Instructions

  1. Prepare the dressing: combine mango, vinegar, olive oil and orange juice in a blender and blend until smooth. If the dressing is too thick, add more orange juice to reach the desired consistency. Season with salt and pepper. Transfer to a jar and set aside.
  2. Assemble the salad: divide spinach, avocado and grilled chicken between two plates and drizzle with the mango dressing.

Recipe Notes

You can use leftover rotisserie chicken. If you don’t have cooked chicken, sear one breast in a skillet with a little olive oil, let it cool, then slice for the salad.
