Funfetti Cake Mix Cookies Recipe — Colorful, Soft, and Quick

Last week was a milestone for Beck: he started at a new school closer to home. To celebrate, we planned two of his favorite things — a bike ride and baking cookies. It felt like the perfect, simple way to mark the change and create a fun memory together.

We kept the cookie plan easy. With a box of cake mix, a couple of eggs and some vegetable oil you can make soft, colorful cookies in no time. Funfetti mix feels celebratory on its own, and it’s one of those recipes where a child can help with most of the steps. That makes it a great choice when you want an activity that’s both quick and kid-friendly.

The cake mix already includes sprinkles, but of course we added even more — because extra sprinkles always make things more festive. This is especially fun around holidays like Valentine’s Day when themed sprinkles add a seasonal touch.

We rolled the dough into small balls and spaced them out on a baking sheet. Using a glass to gently press the balls into flat discs is an easy trick, and kids usually love the smooshing step. Beck especially enjoyed pressing each cookie down and watching the sprinkles spread.

After a short bake, the cookies came out soft, lightly golden and full of colorful flecks. They smelled wonderful and were perfect for a small celebration. The whole process — from mixing to pressing and baking — felt like its own little party.

These cookies are a great go-to when you want a quick, festive treat. They’re forgiving, kid-approved and adaptable — add extra sprinkles, mix in a few chocolate chips, or switch the cake mix flavor to suit the occasion.

Ingredients

  • 1 box Funfetti Cake Mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • Extra sprinkles (optional — let kids join in!)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix the cake mix, oil and eggs until combined.
  3. Line two baking sheets with parchment paper.
  4. Roll the dough into 1-inch balls and place them 1–2 inches apart on the sheets.
  5. Dip the bottom of a glass in flour and press each ball to about 1/4 inch thickness.
  6. Bake 8–9 minutes. Let cool before serving.
