Last week was a milestone for Beck: he started at a new school closer to home. To celebrate, we planned two of his favorite things — a bike ride and baking cookies. It felt like the perfect, simple way to mark the change and create a fun memory together.
We kept the cookie plan easy. With a box of cake mix, a couple of eggs and some vegetable oil you can make soft, colorful cookies in no time. - 1 box Funfetti Cake Mix
- 1/3 cup vegetable oil
- 2 eggs

Instructions
- Preheat oven to 350°F (175°C).
- Mix the cake mix, oil and eggs until combined.
- Line two baking sheets with parchment paper.
- Roll the dough into 1-inch balls and place them 1–2 inches apart on the sheets.
- Dip the bottom of a glass in flour and press each ball to about 1/4 inch thickness.
- Bake 8–9 minutes. Let cool before serving.
