The key to creamy no-machine frozen yogurt is to interrupt freezing with periodic whisking to break up ice crystals. Start freezing the blended mixture, then whisk vigorously at about 45 minutes, again at 1 hour 15 minutes, and once more at 1 hour 45 minutes. Those turns of the whisk help produce a smoother, softer end result.
In the photos you’ll see a semi-frozen result. I prefer my frozen treats a bit soft and scoopable, so I photographed it partially set. The flavor also behaves like a frozen mango lassi—bright, sweet, and refreshingly tangy.
A simple finishing touch is a sprinkle of crushed pistachios. They add a delightful crunch and visual contrast that complements the mango and yogurt beautifully. The pistachios are optional, but highly recommended.

Ingredients
- 1 cup organic plain whole milk yogurt (it makes all the difference)

- Pinch of salt (optional)
Instructions
Place all ingredients in a blender and blend until smooth, about two minutes.
Transfer the mango-yogurt mixture to a freezer-safe bowl and cover. Place it in the freezer and set a timer for 45 minutes.
At 45 minutes, whisk the mixture vigorously to break up forming ice crystals (use a whisk, not a fork). Return to the freezer.
Whisk again at 1 hour 15 minutes and once more at 1 hour 45 minutes. These intermittent whiskings help create a creamier texture.
Allow the mixture to fully set to your preferred firmness. For softer, scoopable froyo, serve when slightly set. For firmer frozen yogurt, let it freeze longer.
