Baileys Chocolate Pudding
I have only a few St. Patrick’s Day recipes on the blog, like a gluten-free Irish Soda Bread and a Corned Beef Hash that’s perfect for using up leftovers. This year I wanted something lighter for dessert, so I made a rich but not-too-heavy Baileys Chocolate Pudding.

This pudding is not kid-friendly because the Baileys Irish Cream is stirred in after the pudding cooks, creating a gently boozy dessert. To make a non-alcoholic version for children, add an extra 1/4 cup milk when you add the milk in the recipe and omit the Baileys.

This recipe is simple and egg-free, which makes it quick to prepare. It achieves deep chocolate flavor by combining Dutch-processed cocoa powder with chopped dark chocolate (I used 72% dark). The chopped chocolate and a bit of butter are stirred in at the end while the pudding is still hot, creating an ultra-smooth, creamy texture.
The result is richly chocolatey with a subtle Baileys warmth. It’s a comforting dessert that feels a little indulgent but is straightforward to make. You might even find yourself reluctant to share.

Easy Baileys Chocolate Pudding Recipe
Ingredients
- 1/2 cup granulated sugar
- 1/4 cup Dutch-processed cocoa powder (Rodelle suggested)
- 1/4 cup cornstarch
- 1/4 teaspoon fine sea salt
- 2 cups whole milk
- 2 tablespoons butter
- 1 teaspoon pure vanilla extract
- 3 oz. dark chocolate, finely chopped
- 1/4 cup Baileys Original Irish Cream
- whipped cream for garnish
- chocolate chips for garnish
Instructions
- Add the sugar, cocoa powder, cornstarch, and salt to a medium saucepan and whisk to combine. Pour in the milk and whisk until smooth.
- Heat over medium-low, whisking almost constantly, until the pudding thickens and comes to a low boil, about 15 minutes. When thickened, stir in the butter and continue stirring for another minute or two.
- Remove from the heat and stir in the vanilla, chopped chocolate, and Baileys. Stir until the chocolate melts and the mixture is smooth. Immediately pour into four individual dishes or one large heatproof bowl. Press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate at least 4 hours. Top with whipped cream and chocolate chips before serving, if desired.
