The holiday weekend is finally here — it’s time to toast the unofficial start of summer! If your plans include a beach day, a backyard BBQ, or a relaxed evening with friends, this Blueberry Kiwi Mojito is a bright, fruity cocktail to serve. I’ll be enjoying mine on the sand along with some classic summer sides and desserts.

To make this Blueberry Kiwi Mojito, muddle blueberries, thinly peeled kiwi slices and fresh mint leaves in a cocktail shaker. Add the juice from one lime wedge, light rum and a handful of ice, then shake vigorously. Strain the mixture into a glass filled with fresh ice, top with Powell & Mahoney Sparkling Mojito, and give it a gentle stir. Garnish with extra blueberries, a kiwi slice or two, and a sprig of mint.

Ingredients  

  • 1/4 cup fresh blueberries
  • 3-4 thin slices peeled kiwi
  • 3 mint leaves
  • juice of one lime wedge
  • 1.5 oz. light rum
  • 4 oz. Powell & Mahoney Sparkling Mojito
  • Garnish – extra blueberries slice or two of kiwi, a few mint leaves

Instructions 

  • Muddle your blueberries, kiwi slices and mint leaves in a cocktail shaker.
  • Add the juice of one lime wedge, light rum and some ice, then give it a couple of vigorous shakes.
  • Strain into an ice filled cocktail glass. Top it off with your P & M Sparkling Mojito. Stir.
  • Garnish with some extra blueberries and kiwi slices and a sprig of mint if desired.
  • Enjoy.
