A group of bloggers are sharing healthy recipes ideal for Easter, and this Purple Cauliflower Tabbouleh is my contribution. It’s a fresh, healthy side dish that looks beautiful on the table thanks to its vibrant purple color.
For me, Easter holds deep meaning as a Catholic — it celebrates the resurrection of Christ and the promise of redemption. Whether or not you share that faith, Jesus is widely acknowledged as a historical figure who was executed under Roman authority. In Christianity, the resurrection is central: it demonstrates a love so complete that it offered life in sacrifice. That message — unconditional love, forgiveness, and acceptance — is at the heart of Easter.
These days the Christian message can get distorted, especially in public debates. I want to emphasize what I believe is Christ’s true message: love, compassion, and inclusion. Jesus spent time with those marginalized by society and called people to forgive, to love one another, and to trust in God’s unchanging mercy. To me, that spirit is what Easter celebrates.

Purple Cauliflower Tabbouleh
Ingredients
Tabbouleh
- 1 Head purple cauliflower
- 1/4 Red onion diced
- 1 1/2 Cups Parsley packed, minced
- Hemp seeds for garnish
Vinaigrette
- Juice from 1/2 orange
- Juice from 1 lemon
- 2 Tbs Extra virgin olive oil
- 1 Tsp Salt
- 1 Tsp Pepper
- Zest of 1/2 orange
Instructions
Tabbouleh

Make the cauliflower “rice”: break the cauliflower into florets and pulse in a food processor until the pieces resemble rice. Take care not to overprocess.

Dice the red onion and mince the parsley, then gently fold them into the cauliflower rice. Set aside while you prepare the vinaigrette.
Vinaigrette

Whisk together all vinaigrette ingredients in a small bowl until well combined. Pour over the tabbouleh and toss to coat evenly.
Putting It All Together

Serve in bowls and finish with a sprinkle of hemp seeds and extra minced parsley for garnish.
