- 1 head Bib lettuce
- 1 mango (or peach)
- 2 tablespoons dry roasted peanuts
- 2 green onions
- 1–2 tablespoons cilantro leaves
- 1 lime
- 2 chicken breasts (boneless, skinless)
- 2 tablespoons jerk seasoning
- 1 tablespoon oil (canola or vegetable)
Instructions
- Wash lettuce and separate into individual leaves.
- Chop mango, peanuts, green onions and cilantro and place in bowls.
- Slice lime into wedges.
- Cut chicken into 1-inch pieces.
- Coat chicken with jerk seasoning until well covered.
- Heat 1 tablespoon oil in a skillet over medium heat and add the chicken.
- Cook 3–4 minutes, stir to turn, then cook another 3–4 minutes until cooked through.
- Remove from heat and let the chicken rest for 5 minutes before assembling.
