Instructions:
  1. In the bowl of a stand mixer fitted with a dough hook, combine 1 3/4 cups flour, cocoa powder, sugar, salt, and yeast.
  2. Warm the butter, milk, and water together until the mixture reaches about 90–110°F (32–43°C).
  3. Slowly pour the warm liquid into the flour mixture while mixing until the flour is absorbed.
  4. Add the egg and continue mixing, adding additional flour a little at a time until the dough becomes smooth and slightly tacky.
  5. Turn the dough out onto a floured surface, knead briefly, then punch down.
  6. Let the dough rest for 10 minutes, then roll it into an 11×15-inch rectangle.
  7. Spread 3/4 cup strawberry jam evenly over the dough, then roll it up tightly from the long side.
  8. Cut the roll into 12 equal pieces and place them cut-side up in a 9×13-inch baking dish.
  9. Set the pan in a warm spot and allow the rolls to proof until doubled in size.
  10. Preheat the oven to 350°F (175°C) and bake the rolls for about 20 minutes, until set and lightly browned.
  11. Remove the rolls from the oven and let them cool slightly before frosting.
  12. For the frosting: in a mixing bowl, beat together the softened butter, cream cheese, and 1/4 cup strawberry jam until smooth.
  13. Add the tablespoon of cocoa powder, then gradually add powdered sugar until the frosting reaches your desired thickness and sweetness.
  14. Spread the frosting over the warm (but not piping hot) rolls and top each with a chocolate-covered strawberry, if desired.
