How to Make Apple Cinnamon Bread
This apple bread is quick to prepare and bakes into a satisfying loaf with under 30 minutes of hands-on time. The method is simple: mix dry ingredients, whisk wet ingredients, combine, fold in grated apples and walnuts, then bake.
To make the apple bread:
Preheat the oven to 325°F and line an 8-inch loaf pan with parchment or greased foil.
In a medium bowl, whisk together the dry ingredients: flour (or oat flour), baking soda, baking powder, cinnamon, cloves, nutmeg, and salt.
In a larger bowl, whisk the wet ingredients: melted butter or coconut oil, coconut sugar (or substitute), maple syrup, eggs (or flax eggs), vanilla, and almond extract until well combined.
Pour the dry mix over the wet mixture. Stir with a whisk briefly, then use a rubber spatula to fold until almost no flour streaks remain. The batter will be thick.
Fold in the grated apples, pressing and folding until the apple juices are released and integrated into the batter. Finally fold in the chopped walnuts. Do not add extra liquid—the dough should remain quite thick.
Transfer the batter to the prepared loaf pan and shape into a loaf, smoothing the top. Bake for 55–65 minutes, or until a toothpick inserted into the highest part comes out clean.
Allow the loaf to cool in the pan on a rack for 10 minutes, then lift it out and cool completely on the rack (about 1.5 hours) before slicing. Cooling fully yields the cleanest slices.

Tips for the Best Apple Bread
These little tips help you get the most flavor and best texture from the loaf.
Pick apples you enjoy. Use a single variety or a mix—combining apples creates layered sweetness and texture. Avoid apples that are old or mealy.
Don’t skip the almond extract. A small amount of almond extract adds depth and enhances the nutty, sweet notes without overpowering the loaf.
Cool fully before slicing. Letting the bread cool completely ensures neat, even slices. Cutting too soon can cause the crumb to tear or become gummy.
